Enhancing the Efficiency of Kitchen Staff Serving Our Veterans

Alesia designed 5,500 SF of inpatient kitchen, storage, food preparation, dishwashing space, and staff areas at the Department of Veterans Affairs Nebraska Western Iowa Healthcare System Omaha Medical Center to bring the inpatient kitchen into compliance with current Veterans Health Administration patient food preparations standards, guidelines, and requirements.

The work includes demolition and replacement of existing walls and finishes, floor finishes, ceilings, electrical service, lighting, mechanical systems (HVAC, ventilation, and fire suppression), natural gas supply, water supply, waste piping, plumbing fixtures, communications and alarm systems, and associated work.

The goal of the project is to provide an optimal kitchen design at the completion of the project, accommodating the cook-to-order concept fully, bringing the department’s utility systems into compliance with current codes and standards and creating a modern environment for the staff to work in. The design team utilized Space and Equipment Planning System (SEPS) to analyze initial space requirements and equipment needs in the space, demonstrating that the inpatient kitchen was slightly larger than needed, creating an opportunity to also satisfy a need for a Whole Health Training Kitchen.
